Hydroponic Lettuce:

Lettuce seed is started in oasis horticubes, an inert medium which just provides a place for roots to expand. After about three to five days the seeds emerge and get fed a weak nutrient solution for the next two weeks. At that point they get planted into the lettuce system. A 300 gallon nutrient tank holds the solution which is constantly pumped out and feeds each lettuce channel 24 hours a day. A thin film of this nutrient mix runs across the roots allowing the plant to pick up what it needs to grow.

Depending on light conditions, the full grown lettuce will be harvested between six and ten weeks of age. For most markets we keep the roots on the lettuce which prolongs its shelf life. When you buy lettuce with moist roots attached, the plant is still alive which means when you prepare it, you have that "just picked" flavor.
